Mail Server Guide/Book?

I work day-in and day-out in a Windows environment with a background in networking, but I play with Linux in my home lab as much as possible. I've had no issues setting up web servers, game servers, and all sorts of other random things. All of that leads to my next hurdle...

Let's say that I have a VPS that I want to use to host my own email. I don't require anything fancy, just (secure) IMAP/SMTP access and spam filtering. What's the best way to go about doing this? I've followed this guide, which seemed to work alright, except K-9 Mail hates the self-signed certs and spam still rolls on in.

Is there a best practice guide or book or something that will help me on my way?
