Media server architecture for enhanced data integrity?

Looking for a cheap way to host various media files in a variety of formats. I was strongly considering NAS solutions using NFS, sshfs, etc rather than a DLNA server, Mediatomb, etc. It will be a plain-off-the-shelf style system; no enterprise hardware or "home entertainment" style solutions will be pursued.

These files will range in size, anywhere from a few MB to a few GB. To ensure data integrity, should I use RAID-5 on the media server or have a dedicated backup server? If the latter, does that backup server need RAID?
