Transferring files via email

I'd like to use email to forward log files from several clients to a central red hat node then strip those log attachments from the emails when they arrive.. Has anyone done this before? There's very little information on the web about this and I'm not too familiar with receiving email from the commandline. I tried using fetchmail + munpack with little success, don't think that was the solution although on some websites people say it is.

Unfortunately for several reasons email is the only option I have for this.. any help would be appreciated.
