Server Deconstruction

I've got a really difficult problem on my hands. I'm new to Linux and I've been tasked to do some administrative work on my company's ERP which is roughly 100 Linux servers.

One of my tasks is to rebuild a server and nobody can tell me how it currently works. This machine is a file server using FTP and NFS.

I need to deconstruct everything that machine currently does so I can rebuild it, currently we have no backup and so the pressure is on. To make matters worse I don't really have a great understanding of Linux yet so I'll either grasp it or fail pretty soon.

Can any of you offer any tips? It's a horrible question I know but I thought I'd throw it out there.

EDIT: /var/log/yum.log will show some installation history.
